Dessert ‘martini’
“I’m always looking for new ways to transform super-simple desserts into something extra special,” shares Charles Grayauskie, FIRST Associate Food Editor. “So this week, I decided to surprise everyone with this sparkling gelatin ‘martini.’ First, I prepare 1 (3 oz.) pkg. of cherry-flavored gelatin mix per box directions, substituting 1 cup of champagne or ginger ale for the cold water. I stir in 2 cups of mixed blueberries, raspberries and sliced strawberries, pour the mixture into 6 martini glasses and chill until set. Next, I beat 1 cup of heavy cream and 2 Tbs. of sugar to soft peaks, spoon it over the desserts and top with more berries and mint. It’s fun, fruity and oh-so elegant.”
