Grilled Peppers, Onions ’n’ Tomatoes

Chili-garlic seasoned veggies make a great add-in for fajitas, or enjoy as a spicy side with any dish
2 Tbs. oil
1 clove garlic, minced 1 tsp. chili powder
1⁄2 tsp. cayenne pepper
6 yellow, orange and/or red
peppers, sliced
8 small scallions, trimmed
4 medium tomatoes, halved
2 medium red onions, sliced
1 Prepare grill for medium-high direct-heat cooking. In large bowl, mix oil, garlic, chili powder and cayenne. Add peppers, scallions, tomatoes and onions; toss to coat. Sprinkle with salt and pepper.
2 Grill tomatoes, cut sides down, until tender, 1 min., and other vegetables until tender, 3–5 min.
