Spirited Mojito Cupcakes

We transforme­d cake mix into a cocktail-inspired sweet sure to spark smiles—for a kid-friendly treat, omit rum from frosting

1 (15.25 oz.) pkg. white cake mix

3 egg whites

1⁄3 cup oil

3 Tbs. finely minced fresh mint

1 tsp. rum extract (optional)

2 limes

1–2 Tbs. white rum (optional)

1 (16 oz.) can white frosting

Green liquid food coloring

Lime slices and straws (optional)

1 Heat oven to 350°F. Line 24 muffin cups with cupcake liners. On low speed, beat cake mix, 1 cup water, egg whites and oil until blended, 30 sec.; on medium, beat 2 min. Stir in mint and, if desired, extract. Divide among liners. Bake until toothpick inserted into centers comes out clean, 18–20 min. Let cool 10 min. Transfer from pans to racks; let cool completely.

2 Grate 1 Tbs. zest and squeeze 1 Tbs. juice from limes into bowl; if desired, stir in rum. Stir in frosting until blended. Tint desired shade of green with food coloring. Transfer to pastry bag fitted with star tip. Pipe frosting over cupcakes. If desired, garnish with lime slices and straws.
