Grill-Roasted Carrots

Our spiced carrots are even more delicious drizzled with a quick yogurt sauce spiced with cumin

1⁄2 cup plain yogurt

1 tsp. ground cumin

1 tsp. lime juice

2 Tbs. oil

1 tsp. ground coriander

1⁄2 tsp. paprika + additional 2 lbs. carrots, trimmed Thyme leaves (optional)

1 Prepare grill for medium directheat cooking. In small bowl, stir together yogurt, ground cumin and lime juice; season to taste with salt and pepper. Cover and chill until ready to serve.

2 In another small bowl, combine oil, coriander and 1⁄2 tsp. paprika. Brush mixture all over carrots; grill, covered, turning occasional­ly, until just tender, 10–12 min. Season to taste with salt and pepper. Arrange carrots on serving plate.

3 Drizzle 2 Tbs. yogurt sauce over carrots. Serve carrots with remaining sauce. Sprinkle with additional paprika. If desired, sprinkle with thyme leaves.
