Minty Strawberry Sauce

ACTIVE TIME: 15 min. TOTAL TIME: 30 min. SERVES: 4

1⁄2 cup sugar

11⁄4 cups fresh mint leaves

1 (16 oz.) pkg. strawberri­es, trimmed, quartered 2 Tbs. champagne vinegar

French toast, waffles or ice cream (optional)

In pot, combine sugar and 1⁄2 cup water; stir in 1 cup mint leaves. Bring to a boil; reduce to medium-low. Cook until sugar is dissolved, about 2 min. Transfer to heatproof bowl and let cool. Strain. In bowl, combine strawberri­es, syrup and vinegar. Cover and, if desired, chill. If desired, serve over French toast, waffles or ice cream. Garnish with remaining fresh mint.
