Just the right ingredients

- —Amanda Pichardo, 44, Harlan, IA

“When my new neighbor moved into the house next door, I wanted to do something to make her feel welcome and decided to bake her a cake. But once I got out the chocolate cake mix and all the ingredients, I realized in my hurry while shopping, I had accidentally grabbed a gluten-free cake mix and frosting. I had never tasted a gluten-free cake, but I truly didn’t want to go all the way back to the store, so I decided to go ahead and make it, hoping it would still be delicious and that she couldn’t tell the difference.

“Once the cake was baked and iced, I packed it up and headed next door. When my new neighbor answered the door, I introduced myself, then held up my cake container and told her I baked her something. I was about to explain

P o w e of l o v e about the mishap when her expression fell in disappointment.

“‘That’s so thoughtful,’ she said. ‘But, I’m afraid I can’t accept it…I’m very allergic to gluten. It shouldn’t go to waste.’

“‘That works out perfectly!’ I smiled with amazement.

“Seeing her confusion,

I quickly explained that this was actually a gluten-free cake and shared the story of my accidental purchase.

“Her eyes lit up and she insisted I have a slice with her.

I was happily surprised to find it tasted just as good as any cake

I’d ever had. ‘I don’t think it was an accident that I bought this cake,’ I told her. She added with a smile, ‘A friendship that was meant to be!’”
