Corn kernels fresh off the cob paired with red onion, cilantro and a kiss of Southwest seasoning make a quick topper for steak grilled to juicy perfection—you can try it spooned over chicken or fish too

1–2 limes

3 cups fresh corn

1⁄4 cup finely chopped red onion 1⁄4 cup minced fresh cilantro

21⁄2 tsp. dry Southwest seasoning 11⁄4 lb. boneless beef sirloin steak,

(about 11⁄ 2" thick )

1 Prepare grill for medium-high direct-heat cooking. Grate 1 tsp. zest and squeeze 2 Tbs. juice from limes into bowl; stir in corn, red onion, cilantro, 1 tsp. seasoning and 1 Tbs. oil. Season with salt and pepper.

2 Coat sirloin steak with cooking spray; rub remaining 11⁄2 tsp. seasoning over all sides of steak to coat evenly. Grill, flipping once, 4–8 min. per side for medium-rare or until desired doneness. Let stand 5 min. before slicing. Serve topped with corn salsa.
