Salmon roll-ups

Cool cucumber slices transform salmon and cream cheese into an oh-so-elegant treat. To make: Using vegetable peeler, cut 2 mini cucumbers into ribbons. Cut 4 oz. sliced smoked salmon into 2" pieces; dollop each with 2 tsp. herbed cream cheese. Roll up; wrap 1 cucumber slice around each roll. If desired, insert toothpicks.

Zucchini fries

This healthy take on traditiona­l fries is extra-crispy, thanks to seasoned panko. To make: Cut 2 zucchini into 3"x1⁄2" sticks. In bowl, beat 2 eggs; in another bowl, add 1 cup Italian-seasoned panko breadcrumb­s. Dip zucchini in egg, then crumbs. Heat 2" oil until shimmering; fry zucchini, flipping occasional­ly, until golden, 1–2 min.

Stuffed tomatoes

These cute-as-a-button bites are guaranteed to disappear fast.

To make: Slice tops off 2 cups cherry tomatoes; reserve tops. Scoop out seeds from tomatoes. Whisk together 3⁄4 cup ricotta cheese and 1 Tbs. chopped basil. Transfer to pastry bag fitted with small round tip; pipe into tomatoes. Add tops.
