Scallion-Herb Potato Salad

Tossing the potatoes with the dressing while still warm ensures they soak up more of the zingy flavor

11⁄2 lbs. red potatoes

1⁄4 cup oil-and-vinegar salad

dressing

1⁄4 cup mayonnaise

1⁄2 cup chopped scallions

1⁄2 cup chopped celery

1⁄4 cup minced fresh parsley,

cilantro and/or dill

1 Cut potatoes into 1" pieces. In large pot, combine potatoes with salted water to cover; over high heat, bring to boil. Reduce heat to medium; cook until tender, 8–10 min. Drain.

2 In large bowl, stir together salad dressing and mayonnaise until blended; stir in scallions and celery. Add potatoes and herbs; sprinkle with 1⁄4 tsp. salt and 1⁄4 tsp. pepper. Toss until evenly coated. Serve warm or cover and chill until ready to serve.
