Apricot-Mustard Glazed Chicken

Zesty mustard and apricot preserves make it easy to give juicy chicken breasts a pop of tangy sweetness

1⁄4 cup apricot preserves

1 Tbs. grainy Dijon mustard 1 Tbs. soy sauce

1 Tbs. balsamic vinegar

1 Tbs. minced fresh rosemary 6 (6 oz.) boneless, skinless

chicken breast halves

1 In bowl, combine preserves, mustard, soy sauce, vinegar and rosemary. Season to taste with pepper. Reserve half of mixture.

2 Prepare grill for medium-high direct- and indirect-heat cooking. Coat chicken with cooking spray; sprinkle all sides with 1⁄4 tsp. salt and 1⁄4 tsp. pepper.

3 Place chicken over direct heat; grill, flipping once, until golden, about 1 min. per side. Move to indirect heat; brush with half of apricot mixture. Grill, flipping once, until no longer pink in centers, 5–7 min. per side. Transfer chicken to platter; brush with reserved apricot mixture and serve.
