Yes, it's official: Your favourite Southern comfort food restaurant, The Bird Southern Table & Bar has reverted to its original name, Yardbird Southern Table & Bar. The James Beard-nominated restaurant from America – Miami, Las Vegas and Los Angeles, to name a few – is a reflection of founder John Kunkel’s roots. Die-hard fans of Lewellyn’s Fine Fried Chicken ($34), which is based on a 100-year-old recipe from Kunkel’s grandmothe­r, Lewellyn, will still be able to enjoy this classic. New dishes created by corporate executive chef Patrick Rebholz and corporate executive pastry chef Hedy Goldsmith of Kunkel's restaurant group, 50 Eggs Inc will draw regulars and a new generation of diners.

Take for example the Sweet Corn Hush Puppies ($14) and Yardbird Hot Chicken Sandwich ($22). The latter is a new take on the original hot chicken from Nashville and features a crisp, yet succulent fried chicken thigh tossed in a fiery ghost chilli rub that is made of Bhut Jolokia, one of the spiciest chillies in the world. Remoulade and butter toasted brioche bun complete the picture.

Desserts fiends will have a field day admiring the colourful Doughnut Tree ($16) or stacks of Funfetti Pancake ($22) complete with colourful sprinkles and finished with lemon glaze and a dollop of whipped cream. (Don't forget to add lashings of their famous Bourbon Maple Syrup.) These can be enjoyed alongside Rebholz’s version of Biscuit and Gravy ($23), which are featured on their newly launched Great American Brunch menu, available on Saturday and Sunday from 10am to 4pm. #B1-07, Galleria Level, The Shoppes at Marina Bay Sands, 10 Bayfront Avenue.
