Style has affected the market in terms of design, but profession­al chefs still lean towards the balance that the classical Wüsthof knife offers, since design is not one of their major concerns. Some new knives are built to maintain sharpness over a longer period of time, however, once they become dull, they are extremely difficult to sharpen. Of course, the Classic and Classic Ikon range will sell in 2017 because they offer similar benefits, with an exquisite design to complement the great features."
