The quantity of fresh herbs used in cooking differs to dried herbs
That’s because the latter is much more concentrated. Where fresh herbs are not available, dried herbs can be substituted, but you won't need as much. How much depends on your taste. Typically one-third to one-half the amount of fresh herbs you would normally use is sufficient. If a recipe calls for 1 tablespoon of fresh thyme, use 1-2 teaspoons of dried thyme. Most fresh herbs can be replaced with dried herbs in recipes, and vice versa.
