How to make herb but­ters

Herb but­ters couldn’t be eas­ier to make. Just add a se­lec­tion of herbs to soft­ened but­ter, wrap the mix­ture in cling film and roll into a cylin­dri­cal shape. Place in the re­frig­er­a­tor to chill. Al­ter­na­tively, you can freeze the but­ter and break off pieces as you need them. Slather your herb but­ter onto baked spuds, pasta, steak or steamed veges, or use it to saute seafood.

Rose­mary but­ter

• 250g but­ter, soft­ened • 2-3 cloves gar­lic • 1 ta­ble­spoon chopped rose­mary leaves • ½ tea­spoon lemon zest • ¼ tea­spoon red chilli pep­per flakes (or sub­sti­tute with salt and pep­per)

Chives & pars­ley but­ter

• 250g but­ter, soft­ened • 1 bunch chives, finely chopped • 1 bunch pars­ley, finely chopped • 1-2 cloves gar­lic, minced • Salt and freshly ground black pep­per to taste
