How to make herb butters

Herb butters couldn’t be easier to make. Just add a selection of herbs to softened butter, wrap the mixture in cling film and roll into a cylindrica­l shape. Place in the refrigerat­or to chill. Alternativ­ely, you can freeze the butter and break off pieces as you need them. Slather your herb butter onto baked spuds, pasta, steak or steamed veges, or use it to saute seafood.

Rosemary butter

• 250g butter, softened • 2-3 cloves garlic • 1 tablespoon chopped rosemary leaves • ½ teaspoon lemon zest • ¼ teaspoon red chilli pepper flakes (or substitute with salt and pepper)

Chives & parsley butter

• 250g butter, softened • 1 bunch chives, finely chopped • 1 bunch parsley, finely chopped • 1-2 cloves garlic, minced • Salt and freshly ground black pepper to taste
