Spiced paneer skewers with mango, chilli & mint salsa

groundnut oil 1 tbsp ginger a small chunk, finely grated ground cumin 1 tsp ground coriander ½ tsp paneer 220g, cut into cubes green pepper 1, cut into chunks mango 1 small, diced red chilli 1, finely chopped mint a handful of leaves, chopped, plus a few leaves lime ½, plus wedges to serve naans 2 small, warmed to serve natural yogurt to serve

Mix the oil, ginger and spices in a bowl. Add the paneer and pepper and toss, then leave for 10 minutes. In a separate bowl, toss the mango, most of the chilli and the chopped mint with a squeeze of lime and season. Heat the grill to high. Skewer the paneer and pepper then grill for 6-8 minutes, turning until the paneer is golden. Scatter with more chilli and the mint leaves. Serve with the salsa, warm naans, yogurt and lime wedges.
