Spiced pa­neer skew­ers with mango, chilli & mint salsa

ground­nut oil 1 tbsp ginger a small chunk, finely grated ground cumin 1 tsp ground co­rian­der ½ tsp pa­neer 220g, cut into cubes green pep­per 1, cut into chunks mango 1 small, diced red chilli 1, finely chopped mint a hand­ful of leaves, chopped, plus a few leaves lime ½, plus wedges to serve naans 2 small, warmed to serve nat­u­ral yogurt to serve

Mix the oil, ginger and spices in a bowl. Add the pa­neer and pep­per and toss, then leave for 10 min­utes. In a sep­a­rate bowl, toss the mango, most of the chilli and the chopped mint with a squeeze of lime and sea­son. Heat the grill to high. Skewer the pa­neer and pep­per then grill for 6-8 min­utes, turn­ing un­til the pa­neer is golden. Scat­ter with more chilli and the mint leaves. Serve with the salsa, warm naans, yogurt and lime wedges.
