Similar to executive chef Maxime Gilbert’s previous Tribute to French Producers menu, the new takeaway experience is focused on hand-selected premium ingredients from France. The a la carte-only menu boasts many revered French produce within its pages; including the seasonal Pertuis Asparagus (HK$298/S$55), which has been braised in seawater and served alongside cured John Dory; and the signature Caviar and Uni Tart (HK$1998/S$366, serves four), chockful of Schrenckii sturgeon caviar from the Royal Caviar Club, Japanese sea urchin and beurre blanc. For a true representation of Gilbert’s expertise with classical French techniques, do give the Pâté en Croûte (HK$298/S$55) a try. His version of the classic pastry is expertly layered with Madame Burgaud Duck and foie gras. The meat and seafood section of the menu sees similar treatment, starting with Brittany Blue Lobster (HK$750/S$137) and a 12-hour confit Pyrenees Lamb Shoulder (HKD750/SGD137). Écriture is also offering stellar poultry choices, including the famed Bresse Chicken (HK$998/S$183) and Plouneour Menez Pigeon (HK$400/S$73). The former is paired with hearty truffled mashed potatoes, while the latter is balanced by grilled maitake mushroom and raspberries.
