Chickpea Scotch eggs

Scotch eggs are having a renaissance. This vegetarian version marries falafel with Scotch eggs to create a glorious Franken-food. Chickpeas not doing it for you? Also currently blowing up on Instagram: a Scotch egg with a cheesy mashed potato coating, a mushroom risotto coating, one made with century eggs, a bubbleand-squeak version, a Bengalistyle potato-curry coated version, and one wrapped in Christmas stuffing. It’s a long way to go, but at one café in Lancashire, England, you can even get Cadbury Crème eggs coated in chocolate brownie, chocolate and sprinkles.
