ROAST BUTTERNUT WITH SHERRY VINEGAR, HARISSA AND HONEY

whole butternuts 2

olive oil 3T

Woolworths harissa paste 2T

sherry vinegar ½ cup

honey 2T

salt, to taste

1 Preheat the oven to 180°C. Cut the butternuts in half lengthways, then drizzle over the olive oil, harissa, vinegar and honey. Season to taste. Make sure the butternuts are well coated. 2 Place the butternuts inside the roasting bag, seal and place in a roasting pan. Roast for 30 minutes. Open the bag for the last 10 minutes of roasting time.
