SMOKED SNOEK PÂTÉ
“This is always a favourite. Use only a goodquality thick mayonnaise, either home-made or Hellman’s. Serve with hot wholewheat toast or crisp crackers, with crudités or use to fill small sweet pepper halves.”

smoked snoek 250 g
thick mayonnaise ¼ cup
crème fraîche ¼ cup
lemon juice 1T
freshly ground black pepper, to taste
toast, crackers, crudités or small sweet
pepper halves, for serving
Flake the fish, taking great care to remove all the bones. Mash the fish with the mayonnaise and crème fraîche. Add lemon juice and black pepper to taste. Mix well. Pack into a small serving dish and chill well. CARB-CONSCIOUS
