Australian baking entrepreneur Natalie Paull spent her formative years working with the likes of Maggie Beer before opening the Beatrix Bakes (beatrixbakes.com) shop in Melbourne in 2011. Why the name? “It’s a play on the suffix ‘-trix’, which was once used to form words like aviatrix (female aviator). I was a female beater and thus beat(e)rix. Beatrix, in Latin, means bringer of joy. And that is, simply, what cake should be,” she explains. Natalie shares 70 of her most mouthwatering recipes for tarts, cakes, pies and fillings in her small-batch baking book Beatrix Bakes (Hardie Grant, R450, available at good book stores).
