Australian baking entreprene­ur Natalie Paull spent her formative years working with the likes of Maggie Beer before opening the Beatrix Bakes (beatrixbak­es.com) shop in Melbourne in 2011. Why the name? “It’s a play on the suffix ‘-trix’, which was once used to form words like aviatrix (female aviator). I was a female beater and thus beat(e)rix. Beatrix, in Latin, means bringer of joy. And that is, simply, what cake should be,” she explains. Natalie shares 70 of her most mouthwater­ing recipes for tarts, cakes, pies and fillings in her small-batch baking book Beatrix Bakes (Hardie Grant, R450, available at good book stores).
