To salt or not to salt?

This is the topic of a heated debate on Reddit. While you may be used to salted rice, many cultures serve it unsalted. Indonesian cookbook author Sri Owen encourages cooks to let the flavour of rice speak for itself. Japanese, Korean and Chinese recipes often don’t call for salt either – though the rice may be served with salty condiments such as soya sauce or miso.

Don’t keep rice in the fridge for longer than three days. Bacteria called bacillus cereus grows in rice, and can give you food poisoning.

Never reheat rice more than once as reheating causes an explosion of bacteria.
