“Roast chicken for sure.
Abi once told me to roast it on top of carrots and onions, so I do that every time. I roast it breast-side down for 40 minutes, then breastside up for another 40 minutes before resting it breast-side down for 10 minutes – that way all the juices go into the breast meat (a Maggie Beer trick).”
