DAIRY-FREE PARMESANAND-LEMON CHICKEN WITH CAULIFLOWER COUSCOUS

olive oil 2T capers 2 T, crushed garlic 3 cloves, crushed free-range chicken breasts 4, butterflied Woolworths avocado oil spread 2T sea salt and freshly ground black pepper, to taste cauliflower 1 head, finely chopped (or use Woolworths cauliflower couscous) Woolworths dairy-free Parmesan
50 g, grated, for sprinkling fresh parsley 10 g, chopped, for serving
1 Heat the olive oil in a large saucepan. Add the capers, garlic and chicken, and fry until slightly browned – about 5 minutes. Add the avocado oil spread and allow it to brown. Season, then remove the chicken from the pan. 2 In the same pan, fry the cauliflower until tender. Serve sprinkled with the Parmesan and parsley. DAIRY-FREE, WHEAT- AND GLUTEN-FREE
