butter or margarine 125 g sugar 75 g free-range extra-large eggs 3 self-raising flour 240 g salt ½t super maize meal 80 g whole kernel corn 1 x 410 g can, drained chopped fresh herbs 1 T (optional, use whatever is on hand) full-cream milk ½ cup

1 Preheat the oven to 180°C. 2 Grease a 23 cm loaf tin or a 20 cm round cake tin. 3 Cream the butter and sugar, then add the eggs, one at a time, and beat until light and fluffy. 4 Sift the flour and salt, and add to the creamed mixture. Add the maize meal, corn, herbs (if using) and milk, and mix well. 5 Spoon the mixture into the loaf or cake tin and bake for 55 minutes.

Cook’s note: You can also use empty food cans (like in the picture). You will need 4 x 410 g cans, washed, rinsed and dried. Grease them well before spooning
