CHARGRILLED STEAK WITH FLAVOURED BUTTER

GREAT VALUE Preparation: 10 minutes Cooking: 10 minutes For the flavoured butter: Kerrygold butter 250 g, slightly softened
Italian parsley 4 T roughly chopped garlic 2 cloves, finely grated lemon 1, zested smoked chilli flakes, to taste ground cumin 1T
rib-eye steak 1 kg bay leaves 4 sprigs sea salt, to taste
1 To make the flavoured butter, combine all the ingredients except the ground cumin. Use a wooden spoon to mix it, then spoon onto a sheet of clingwrap in a log shape.
2 Sprinkle the cumin over the butter and the clingwrap, then roll the butter into the cumin, covering with the clingwrap. 3 Secure both ends of the clingwrap, then chill for 30 minutes. 4 Cut into discs through the clingwrap, then remove the plastic and place the butter onto the hot steak. Serve with creamy polenta with Kerrygold butter stirred through it. 5 To make the steak, wrap the bay leaves around the steak using string. Season with salt, then grill in Kerrygold butter over a high heat.
