olive oil 6T wood-smoked bacon 500 g, diced dried oregano 4t beef mince 1 kg onions 4, finely chopped garlic 6 large cloves, finely chopped celery 500 g, finely chopped carrots 300 g, sliced julienne (I buy the ready-cut ones, but you can slice or grate your own) peeled and diced tomatoes 4 x 410 g cans fresh basil 60 g water 2 cups sea salt and freshly ground black pepper, to taste

Grana Padano, Parmesan or Woolworths Italian hard cheese 300 g, grated penne, fusilli or farfalloni (or lasagne sheets if you must) 500 g, cooked al dente (you can use more pasta if you want the Bolognese to stretch)
