CHUCK STEAKS WITH EASY CAFÉ DE PARIS BUTTER AND ROAST APACHE POTATOES

Woolworths Apache potatoes 8 olive oil 1T salt, to taste
Woolworths Angus chuck eye steak
400 g, at room temperature butter or duck fat 2T
For the café de Paris butter, mix: shallot 1, finely chopped garlic 1 clove, chopped capers 6 anchovies 4 parsley 4 T chopped dried oregano 1t cayenne pepper 1t
Dijon mustard 2t tomato sauce 1T Worcestershire sauce 2T lemon zest 1t lemon juice 2T butter 300 g, at room temperature sea salt and freshly ground black pepper, to taste
1 Preheat the oven to 180°C. Place the potatoes on a baking tray and rub with oil and salt. Roast for 25–35 minutes, or until tender.
2 Heat a cast-iron pan or frying pan until smoking hot. Rub the steaks with the butter or duck fat, then fry for 4 minutes on each side. Season, remove from the pan and allow to rest. 3 To serve, heat the butter and pour over the steaks and potatoes.
