BRINJALS IN OLIVETOMAT­O SAUCE WITH APPLE SALAD

Preparatio­n: 10 minutes Cooking: 35 minutes

olive oil 4T brinjals 3, cubed

Woolworths olive stir-through pasta sauce 1 x 212 ml jar sea salt and freshly ground black pepper, to taste breadcrumb­s 50 g parsley 5g polenta 200 g cream 2T butter 3T

For the salad: green apples 2, cut into matchstick­s celeriac 1 bulb, cut into matchstick­s basil 15 g lemon juice 2T olive oil 2T sea salt and freshly ground black pepper, to taste

1 Heat the olive oil in a large, heavybased saucepan over a high heat.

Fry the brinjals in batches until golden. 2 Add the pasta sauce, season and cook for 10 minutes over a medium heat. 3 Meanwhile, prepare the polenta according to package instructio­ns. Add the cream and butter at the end of the cooking time. 4 Season and stir until combined. Toss the salad ingredient­s together and season. Serve the brinjals with the polenta and the salad.
