Based on Google search data, the number one chocolate recipe South Africans need is chocolate cake. And the number one thing people look for in a chocolate cake? Moistness.

And it is true, chocolate cakes are prone to dryness, which is why many recipes call for sour cream, yoghurt or, as in the late, great Dorah Sithole’s version, inkomazi or buttermilk.
