Without the leftover root vegetable gratin, you can make a slightly different version of this hash. Peel and dice a potato, parsnip and a chunk of celeriac. Simmer in boiling water for a few minutes until tender, then drain. Add to the pan and fry up when you would fry the gratin, adding a splash of double cream as you go.
