SEAFOOD PAELLA

“This dish draws inspiratio­n from biryani with its layers of rice and fragrant filling. It’s a spicy twist on the traditiona­l seafood paella.”

onions 2, sliced garlic 3 T crushed olive oil ¼ cup fish masala 2T ground turmeric 2t red chilli powder 2t cloves 2 whole allspice 4

Woolworths freshly frozen seafood mix 1 kg butter 2T

Woolworths freshly frozen uncooked shell-on large prawns 1 kg, deveined and rinsed rice 525 g, cooked coriander, to garnish

1 Preheat the oven to 180°C. Braise the onions and 1 T garlic in the olive oil, half the fish masala, turmeric, chilli, cloves and allspice, then set aside. 2 In a separate pan, braise the seafood mix, 1 T garlic and spices in 90 g butter, then set aside. 3 Fry the prawns in the remaining garlic and butter for 2–3 minutes and set aside (they should not be fully cooked as the cooking process will be completed in the final step). 4 In a large saucepan, layer each element as follows: half the rice, onions, seafood mix and prawns. Cover with the remaining rice, dot with butter and cover the saucepan with foil. 5 Place in the oven for 45 minutes, then serve immediatel­y garnished with fresh coriander.
