FATTOUSH SALAD
“This Lebanese salad celebrates flavours unique to the region such as sumac and za’atar. It’s topped with crunchy pita bread for additional texture.”

pita breads 3–4, cubed olive oil 3T
Woolworths sumac 2t
Woolworths za’atar 1T sea salt and freshly ground black pepper, to taste
Romaine lettuce 2 heads, chopped cucumber 1, quartered and sliced Rosa tomatoes 200 g, halved radishes 3, stems removed and thinly sliced green pepper 1, seeded and chopped fresh mint 1 cup, chopped fresh parsley 1 cup, stems removed and chopped
For the dressing, whisk: lemon 1, juiced olive oil 3T sea salt and freshly ground black pepper, to taste garlic 2 cloves, finely grated sumac 1t pomegranate molasses 1 t (optional)
1 Preheat the oven to 180°C. Toss the pita

bread in the olive oil, sumac, za’atar and season to taste. Place in an ovenproof dish and bake for 10 minutes, or until golden and crispy. Remove from oven and allow to cool. 2 In a large bowl, toss the lettuce, cucumber, tomatoes, radishes, pepper, mint and parsley. 3 Pour the dressing over the salad, add the toasted pita and toss before serving.
