BRINJAL FRITTERS WITH POACHED EGGS IN ANCHOVY-SPIKED TOMATO SAUCE
“Mashed brinjal seasoned with garlic and oregano makes deliciously different fritters. For dinner, add easy home-made patties.”

FOR BRUNCH
For the brinjal fritters: brinjals 2 (350 g) garlic 1 clove, crushed dried oregano 1t sea salt and freshly ground black pepper, to taste free-range egg 1 baking powder 2t flour 4T olive oil 1T sunflower oil, for frying
For the anchovy-spiked tomato sauce: tomato passata 2 cups vegetable or chicken stock ½ cup garlic 1 clove, crushed
Woolworths fresh anchovy paste 2–3 t fresh oregano a few sprigs sea salt and freshly ground black pepper, to taste
very fresh free-range eggs 4 crusty baguette, for serving wild rocket, to garnish
1 Peel and cube the brinjals. Cook in salted boiling water for 5 minutes, or until tender. Drain very well. If necessary squeeze out the excess liquid, then mash. Add the garlic and oregano and season to taste.
2 Beat the egg with the baking powder, flour and olive oil. Mix with the mashed brinjal. 3 Heat ½ cup sunflower oil in a saucepan. Add spoonfuls of batter and fry in batches until golden brown. Drain on kitchen paper. 4 To make the tomato sauce, heat the passata, stock, garlic and anchovy paste in a pan. Add the oregano and simmer uncovered for 5 minutes, or until slightly thickened. Season to taste.
5 Break each egg into a strainer, then slide into the simmering sauce, leaving behind excess white. Cover and reduce the heat to medium. Poach gently for 3 minutes or until the whites are set and the yolks slightly runny. Garnish with rocket and serve with the brinjal fritters and baguette. DAIRY-FREE, MEAT-FREE

For the patties: free-range egg 1 garlic 1–2 cloves, grated small onion 1, peeled and grated coarse breadcrumbs 30 g dried oregano 1t sea salt and freshly ground black pepper, to taste free-range chicken mince
500 g, at room temperature
1 Preheat the oven to 180°C. Whisk the egg, then add the remaining ingredients except the chicken and mix. Add the chicken and mix lightly. 2 Shape into 10 small patties and place on a baking tray coated with cooking spray. Bake for 15 minutes or until just cooked. CARB-CONSCIOUS, DAIRY-FREE
