Golden Cenarth with gewürztraminer raisins
35g raisins
150ml gewürztraminer 1 Golden Cenarth ½tsp caraway seeds
Place the raisins in a bowl. Gently heat 100ml of gewürztraminer in a pan and pour over the raisins. Cover the bowl with cling film and leave to soak overnight.
Pour the remaining wine in a dish and dip the cheese in it, ensuring the rind is evenly soaked.
Sit the cheese on a clean plate and sprinkle with the caraway seeds. Refrigerate overnight.
To serve, dress the top of the cheese with the soaked raisins.
