Golden Ce­narth with gewürz­traminer raisins

35g raisins

150ml gewürz­traminer 1 Golden Ce­narth ½tsp car­away seeds

Place the raisins in a bowl. Gen­tly heat 100ml of gewürz­traminer in a pan and pour over the raisins. Cover the bowl with cling film and leave to soak overnight.

Pour the re­main­ing wine in a dish and dip the cheese in it, en­sur­ing the rind is evenly soaked.

Sit the cheese on a clean plate and sprin­kle with the car­away seeds. Re­frig­er­ate overnight.

To serve, dress the top of the cheese with the soaked raisins.
